Lemon Bunt Cake is Actually Quite Yummy!

So as the title explains I am not a lover of Lemon Cake but the Hubby is and as it was his Birthday I thought Ok let’s give him a special treat and make him a Lemon Bunt Cake (lol). I decided to freestyle the recipe and do you know what it really was very nice. Even me a non Lemon Cake eater liked it actually really liked it!

So here’s the recipe give it a go and let me know what you think…..

8 ozs Plain Flour
2 Level Teaspoons Baking Powder
6 ozs Caster Sugar
Finely Grated Rinds of 2 Lemons
Juice of the 2 Lemons
1 Teaspoon Vanilla Essence
2 Eggs
3 Tablespoons Milk

Cook for around 35 mins on gas mark 3 or 175c but check by sticking in a knife near the end of the cooking time if it comes out clean it’s cooked if not give it a bit longer.

As always I put all the ingredient into a mixer but if you want to do it properly make sure you mix the butter and sugar together first,then the wet ingredient then the flour and baking powder.

For the topping

5 Tablespoons Icing Sugar
Juice of 1 Lemon
Drop of yellow food colouring
Yellow Sprinkles

You need to make sure the cake is cooled properly before applying the topping I just drizzled the topping over the cake looked quite pretty but if you want it to cover the cake in icing I suggest doubling the topping recipe.




Cooking Up A Storm

Saturday I decided I was going to make a Chicken and Vegetable Pie a recipe I have been wanting to do for a while. The hubby loves a bit of pastry actually i think that maybe his favourite bit of the pie, but by the look of his empty plate I think he liked the filling too!


You can find the recipe here. I used any vegetables I had in my fridge plus the compulsory frozen peas and sweetcorn I also used puff pastry. It’s a pretty easy pie recipe and doesn’t need cream or a million different herbs or strange ingredient so you can pretty much whip it up with store cupboard ingredients. The only thing that takes a while is pre cooking the chicken but you can just pop that in the oven and kind of forget about it for 40 minutes. I was unable to take a picture of the full pie as everyone had started to tuck in before I got the chance. But here’s a look at the half eaten pie! I served it with some extra green Vegetables and good old mash potato.


I decided to doubled the pie ingredients and have frozen it as it will make a quick healthy midweek meal to have with some rice. Creamy Chicken and rice is one of my favourite dinners Yum yum.

I have also been baking again and had to share this recipe with you. If you like coffee cake you will love these. Give them a go super easy too. The icing was delicious and not at all sickly. You can find the recipe here


I made them for Sunday a joint celebration for Mothers Day because Mums Rock! and for Doolallytat JJ’s birthday as she will be in sunnier (hopefully) climes for her actual birthday. The cakes went down a storm and were gone in a flash and mum loved her Doolallytat creation handmade card.

Any Excuse For Cake…

I’m off on a day trip out tomorrow to the lovely Wakehurst place where they have beautiful gardens and is home to the millennium seed bank, they are hoping by 2020 that they would have banked over 25% of the worlds wild plant species. The work they do is hugely important and the gardens are especially great for picnics and what is the most important part of a picnic….yep you guessed it CAKE!

I have been meaning to make a marble cake for such a long time and I love making cakes in my Bundt tin so I thought what can be better than a marble Bundt cake. I think my love of Bundt cakes is mainly because I like saying Bundt cake it sounds much more special than a cake baked in a regular tin and how easy they are to cut, which make them ideal for a picnic as you can cut them into easy to manage slices.

So you can find the recipe here. It’s super easy as you just bung the ingredients minus the coco powder (I use green and blacks as its my favourite and gives a lovely chocolate taste) into you blender. Then separate half the mixture, mix in the coco into one of the mixtures then dollop alternatively into your tin then the fun bit using a knife swirl the chocolate and vanilla gently together to create the marble effect.

A little top tip as I used to struggle getting my Bundt cakes to come out of the tin in one piece, I use a spray sunflower oil so you can get the whole tin coated and the cake should release like a dream.


So here it is…..And as I’m going to pre slice it to take it to the picnic I can have a slice with a cuppa and no one need know!

Now That We’ve Found Love……

Well this is what I’m going to do with it (yes that was a nod to the classic Heavy D and the Boyz if you’ve never heard it it’s a Valentines must, check it out)

So with it being the eve of the day of love I thought I would show you what kind of Valentine craftiness I have been up to…..

First up is some amazing hearts made from twine, flour,water and acrylic paint. I found this on We Know Stuff’s blog and I knew I had to have a go. Mine aren’t quite as impressive as We Know Stuffs but a pretty impressive first attempt if I do say so myself:

Next up are my bakers twine and felt hearts really simple and look great either as a garland or for using instead of ribbon on presents.

And all together just the right amount of love…..

I’ve also been busy in the kitchen and an adaptation of a lovely James Martin recipe for Cherry Shortbread Hearts which can be found here. Mine were slightly different as I didn’t have any cherries or cherry jam I know I know it is one of the main ingredients but I did have blueberry and apricot jam and it was a result as they taste Divine…..

And on that note I think I’ve just heard the kettle boil so here’s to a cuppa and a biscuit or two!

Ready Steady Bake….

This is my last week at my current job and I had been looking forward to a fun last week…..however all my team are coming down with the lurgy & stayed at home in bed so I had a lonely day.

But what better way to cheer myself up but with some chocolatey goodness.

Doolallytat’s H is the resident expert at baking scrummy goodies so I asked her for a fabulous recipe and she did not disappoint with this amazing Brownie Recipe

The main thing I learnt about Brownies is THEY ARE NOT DIET FRIENDLY!

One whole pack of butter, a bag of sugar and 4 eggs go into making these bad boys.

The Brownies turned out really yummy and the coconut in the recipe makes them really moist and adds an extra something.

As you can see from the picture we have already been digging in and I have a feeling they will be even tastier tomorrow (Maybe I will even share them)
